
Lemon Rice
Easy to make, my lemon rice recipe includes a mixture of fried mustard seeds, urad dal, chilies (hot green peppers), herbs and spices.

Ingredients
1 cup rice 200 grams, I used basmati rice
1.5 cups water
salt to taste
2tablespoons lemon juice or to taste
1/2 teaspoon urad dal (dhuli) soaked for 10 minutes
1/2 teaspoon chana dal soaked for 10 minutes
1 tablespoon oil
6 -7 cashew
1/2 teaspoon mustard seeds
5-8 curry leaves
1 green chili sliced, or to taste
1/4 teaspoon turmeric powder
1inch ginger (chopped)
How to Make Lemon Rice
First rinse 1 cup rice and soak in enough water for about 20 to 30 minutes then take rice, salt and 2 cups water in a pan. Cover and simmer until all the water has been absorbed and rice grains are tender and fluffy.

Heat oil in a pan,add some oil and clarified butter(optional),add mustard seeds and let it splutter.Now add chana dal and urad dal.

When dals begin to splutter, add cashew,curry leaves, ginger, chilli, . Saute them well. turmeric powder followed by rice.Add salt and lemon juice to the rice and mix well.
Serve hot.
