What is mix veg?
Mixed vegetables refer to ready to use combination of cut vegetables. The vegetables may be chopped, sliced, cubed or in juliennes. The typical vegetables included in mixed vegetable are cauliflower, carrots, cabbage, French beans and peas. Several different dishes are called “mixed vegetables”; they all consist primarily of different kinds of vegetables cut into pieces and mixed together, then either served as-is or else cooked, typically by sauteing. When you prepare recipes that include a variety of types of vegetables, you receive the nutritional benefits of each.
What is vegetable curry made of?
The curry base is made with onions, tomatoes, ginger, garlic, red chilli powder and garam masala. I prefer to go with potatoes, paneer, peas, cabbage, cauliflower and bell peppers. Though you can use other veggies like sweet corn kernels, baby corn, sweet potato and broccoli, the curry will have different flavors.

2 tbsp Oil
Salt to taste
1tsp Red pepper powder
1tsp Coriander powder
1tsp Turmeric powder
2tsp Ginger Garlic paste
2 medium size Potato
1 cup peas
1 cup Cabbage
100 gm Cheese
1tsp Garam masala powder
Coriander for garnish
How to cook
Heat the pan and add oil fry all the vegetables. Frying vegetables give the crunch to them and enhance the flavor of it. Make sure to fry paneer separately because its tender and moist . It will release more water.
Paneer cubes should be fry to get golden brown colour. Fry them nicely.
Now in the same pan add some oil if needed then add cumin seeds and fenugreek seeds make the splutter. Now add onion and cook until it gets translucent now add ginger garlic paste and tomatoes.
Give a nice mix . Tomatoes will release water now add red pepper powder, coriander powder and turmeric powder add salt as per your taste. Saute it nice let the oil release.
Once the oil seperates then add fried vegetables and mix well with the Curry.
Add 1cup water and cook for 15 -20 minutes oan low flame.
Check the consistency then simmer as required . Turn off the flame garnish with garam masala and coriander.
