Potato Egg Curry/anda aalu korma

What is the difference between egg curry and egg masala?

Curry refers to a cooked vegetable or meat with spices and salt. On the other hand, masala is a kind of mixed spices used in a curry to add more flavor and taste to it. This is the main difference between the words masala and curry.

Potato Egg curry is a comforting Indian dish of curried eggs. It is basically made with hard boiled eggs, potatoes, onions, tomatoes, whole & ground spices and herbs.

Potato egg curry is good for health?


Egg curry is highly nutritious food, especially for children as it is loaded with proteins, calcium, healthy fats, vitamins, and minerals which is much needed for healthy growth. Added to that, eggs are the only food source that naturally contains Vitamin D essential for calcium absorption and bone development.

INGREDIENTS

4 hard boiled eggs
2 tablespoon oil
5 small potatoes
1 onion
1/4 tsp fenugreek seeds
1/2 cup chopped tomatoes
1 tablespoon ginger garlic paste
1tsp red pepper powder
1tsp turmeric powder
2tsp coriander powder
1/2tsp garam masala powder
Coriander for garnish, salt to taste.

HOW TO COOK


In a large pot cook the egg for 10 minutes, plunge in cold water and let them cool, then peel.

Heat oil in pot add, Poked eggs or make small cuts in the eggs and fry until golden brown. Peel and cut the potatoes in to two halves , then fry them in vegetable oil for 5 minutes.

In the same pot add fenugreek seeds make them splutter, now add ginger garlic paste saute a little.


Add chopped onion and sauté over medium heat for 5-7 minutes, then add the powder of red pepper,turmeric and coriander,and cook until the oil gets separates.

Then add the chopped tomatoes and let the curry simmer for 5 minutes,add salt then pour 1cup water, bring to a boil, then lower the heat and simmer for 10 minutes, add the eggs, potatoes to the pot.

Add required amount of water.

Close the lid and let it simmer for 10 minutes until the potatoes are tender but not falling apart.

Garnish with garam masala and coriander.

Tips: add 1 tsp vinegar when you boil the eggs, this makes your eggs perfectly boiled without any cracks.
