One of the most aromatic biryani, the Hyderabadi biryani is a favourite of many food lovers throughout India and the world even. The strong aroma of the biryani comes from the kewda, rose water and saffron that is sprinkled on the biryani.

Which rice is best for biryani?

For biryani, basmati rice is the ideal variety to use you can use selha rice too.

INGREDIENTS


FOR AKHNI:(gravy)
500gm meat(chicken/mutton/ beef)
4tablespoon oil
1 cup onion
2tsp garam masala
1 tablespoon ginger garlic paste
1tsp red pepper powder
Salt to taste
2 spoon Green chillies(cut into halves)
FOR RICE:
500gm basmati rice
(Soaked for 30 min)
4cup water
2tsp oil
Salt
1inch cinnamon stick
4 cloves
4 green cardamom
2 black cardamom
2 bay leaves
2tsp kewra water/rose water
Food color(yellow/orange)
2 tbsp garam masala
5 Green chillies(cut into halves)

How to cook:

FOR AKHNI: Heat oil and add onions to it wait to turn it golden brown then add meatand fry for a couple of minutes. Add ginger garlic paste and saute.

Now add red pepper powder Salt and garam masala and cook until the oil separates. Add green chillies.

FOR RICE: water in a pot add whole spices, salt, oil wait for a boil. Now add soaked rice. Cook rice about 80% then strain the rice and set aside.

Make layers of rice and meat and add the kewra color on the top of it.

Sprinkle garam masala and add fried green chillies with oil on the top,cover the lid for 10 minutes. Serve hot.
